Mushrooms

Our allotment has, as regular readers will have realised, been pretty wet recently. Not great for getting jobs done, but it has been a real bonus for the mushroom spores which have been blown onto the allotment or hidden in the soil. All over the plot there are mushrooms popping up from between bits of wood chip, or from underneath some discarded leaves. Every time I see a new crop appearing I have an urge to pick them and turn them into a delicious mushroom dish. The problem is, that I know there are a good number of mushrooms which may result in my gorgeous ravioli, risotto, or mushrooms on toast, causing me to have a serious stomach ache!

I’ve found myself a solution to this mushroom dilemma though – grow mushrooms myself. And the people at the Espresso Mushroom Company provide the way of doing it. Fresh mushrooms for you to pick, without the risk of causing yourself to be ill. The added brilliance to the Espresso Mushroom Company’s kit is that the mushrooms are grown on recycled coffee grounds. Apparently, each of their Kitchen Garden kits contains coffee from 100 espressos. Meaning, that as that is more coffee than you’ll drink in the time it takes to grow three cycles of mushrooms, you are ‘coffee-neutral’! As an avid drinker of coffee, but concerned about the impact anything I consume has on the environment, the sustainability of this product is a real winner.

The kits themselves are incredibly simple and easy to get cropping. Just open the box, soak the coffee grounds and mushroom spores contained within a plastic bag in water, pop back in the box and wait. A daily spray of water will, after a week or so, see the mushrooms beginning to fruit. Within another week you will have a super crop of edible mushrooms (the delicious oyster mushroom in the case of the kit I had). As you can see from the photos above, you get a decent crop, and the slightly older mushrooms can always be dried and used as porcini if you don’t get round to eating them all. Fresh, safe to eat, mushrooms which you can pick from the comfort of home, what’s not to like.

Roasted Carrot and Cumin Soup with Labneh

With weather a little colder in the last few days, and certainly as a way of warming up after yet another drenching, soup is firmly back on the menu. Our carrots at the allotment have been pretty good this year, but due to the clay soil I only every grow small varieties like Chantenay  and Paris Market. Although this means I have a good amount of carrots, their small size also results in their being eaten up speedily. All this means we don’t have any carrots in storage. However, the other day I was given a load of carrots by a friend, with the mission of turning them into something yummy. My go-to use for a carrot glut is carrot and coriander soup, but we’d had that last week, so an alternative was needed. Roasting the carrots was needed to get the best of their (slightly past their best) flavour, so I added some cumin, onions and garlic when they went in the oven. The resulting spiced carrots made the perfect base for a sweet, spiced warming soup. Topped with cool slightly sharp Labneh it was just what was needed.

You will need

700g carrots, peeled and roughly chopped (larger chunks take longer to roast, so vary times accordingly)
3 cloves of garlic
1 onion (chopped into eighths)
Salt & Pepper
2 tsp of cumin seeds (slightly crushed)
drizzle of olive oil
1l good chicken stock
Labneh, freshcoriander and zaatar to serve – I made my own labneh, by straining 450g of yoghurt with a pinch of salt overnight.

Preheat the oven to 200˚C. Add the chopped carrots, garlic and onions to an oven tray, sprinkle with the cumin, salt and pepper and olive oil. Toss the vegetables to ensure they are all covered in the oil and seasoning. Roast for 30 mins or until partly browned. Once the carrots have started to caramelise, pour them into a saucepan and add 1l stock. Bring to the boil and simmer until the vegetables are soft and tender. Whizz in the food processor and adjust seasoning as necessary.

Serve the hot soup with a spoonful of the labneh (or Greek yoghurt if you want) and a sprinkling of zaatar and fresh chopped coriander.

December at Plot 4

What a wet month! It’s been weeks of random downpours and wind fuelled rain. The allotment has a real windswept and weather beaten look to it, and our visits to the plot have often been cut short by inclement weather.

November , despite the weather, has given us some crops to harvest. In this period of the year a few plants come to the fore, with chard and beetroot being highlights. The chard has gone into a number of dishes including a warming chard pilaf. I love the way this beet brightens up the allotment with its rainbow coloured stems punctuating the slightly drab look of the plot in November. The last of the beetroot has been eaten too (I must plant more next year), going into a roasted vegetable salad with goats cheese. I’ve still got some squash stored in the greenhouse and they’ve gone into soups, pasta dishes and a great version of Leon’s Dalston Sweet Potato Curry (replacing the sweet tubers with roasted squash). Cabbage and Jerusalem Artichokes are also making their way onto our dinner plates, allowing us to enjoy their earthy flavours.

At this time of year there is not much to be sowing until the spring. The last few bulbs will go in (tulips) in the next day or so, but even then its possibly a bit too late and we’ll have to see what comes up in the new year. Instead of sowing, its time to sit down with a cup of tea and the seed catalogues; allowing myself time to dream about next year.

With the promise from the forecasters of more rain and wind this month, the chance to get on the soil has gone. Instead, the jobs are more about tidying up from the year past. Tools will need a clean and the shed could do with a tidy too. I’ll continue to put food out for the birds, and make sure that crops that need it are protected from the frost and wet. It’s also time to spruce up the shed, finishing the job of lining it with insulation and internal cladding and giving it lick of paint. All of which can be done with copious cups of tea made on the wood burner.

Favourite Five Pear Recipes

Our little pear tree has been a real success this year. So small that there is no way it could support a partridge for a Christmas card photo shoot, it has had a really good crop of beautiful fruit. I’ve come to pears late in my life; as a child I always saw them as grainy, crunchy and not entirely appealing, but as an adult I’ve grown to appreciate the moment in time when a pear is a perfect sensuous fruit. There is little better than a perfectly ripe, juicy, pear just sliced and eaten; but they’re a brilliant ingredient too and appear in some of the family’s favourite dishes.

Roasted Roots, Pears and Lentil salad – Roasted pears are a warm, sweet, caramelized delight, and combined with earthy vegetables like beetroot and carrot, and nutty green lentils, make a super winter salad. This salad is an adaptation of the salad posted the other day, using pears instead of apples and blue cheese instead of goats cheese.

Gluten-free Pear and Chocolate Tart – This has become a big hit with my son and is made by both his grandmothers whenever he goes to visit, indeed one of them was the first to make it and it has been passed around the family and enjoyed by all. Having made a gluten free pastry case, the filling to this tart is made of quartered pears in a chocolate almond. To make the sponge, combine 125g ground almonds, 125g softened butter, 95g caster sugar and two eggs, before mixing in 185g warm melted chocolate. Place the quartered peeled pears in the blind baked pastry case, then pour in the filling. Bake for 45 minutes at 190°C.

Pear, Red Cabbage and Walnut Slaw – Fruit in slaws is a real favourite of mine. I love how apple adds a contrasting sweetness to my beetroot and carrot slaw. This version is a nod to the classic Waldorf salad. Combine shredded cabbage, thinly sliced pears, sliced celery and some roughly chopped toasted walnuts. Add a splash of cider vinegar to some mayonnaise, season, then add to the fruit and veg. Make sure the dressing is distributed evenly, then serve.

Poached Pears – Such a simple dessert, but one which really enhances the flavour. Combine 3 cups white wine, 3 cups of water, a knife tip of vanilla paste and 3 cups of sugar to make a poaching liquid. Warm the poaching liquor, peel the pears and place in the saucepan. Use a piece of baking parchment to form a lid and poach for 10-15 mins (depending on how ripe you fruit is). When soft, take off heat and serve immediately, or pop in the fridge with the poaching liquid until needed. Super as a pudding, but equally good on top of your breakfast porridge.

Pear Frangipane Tart – I love frangipane, and it goes brilliantly with pears. In the past I have used ground chestnuts instead of the usual almonds, giving it a slightly sweeter nuttiness. Use just pears, or combine with poached quince for a more autumnal decadent tart.frangipane tarts (2)

 

Autumnal Root Vegetable Salad with Goats Cheese and Lentils

During the spring and summer, there’s not much more I like than to have a fresh salad, using what I can find at the allotment to make a delicious lunch. As the weather cools and the days get shorter (and wetter it seems), my love of the salad is replaced by a desire to eat warm comforting food like jacket potatoes, stews, and soup. However, the root vegetables are often at their best during this period and I’ve become to realise that they are just as good in a salad as a juicy tomato, or crunchy cucumber. When roasted, their inherent sweet earthiness is perfect to team with the slightly bitter leaves of chicory or rocket, providing both a fresh and comforting taste. So today, I’m having an autumnal salad of roasted carrot and beetroot, green lentils and a little goats cheese. Perfect.

You will need (for two people)

2 medium sized beetroot chopped into eighths
2 medium carrots, cut into small chunks
1 crisp apple, cored and cut into eighths
1tsp. caraway seed
dash of olive oil
100g Goats cheese

For the lentils
100g green lentils
1 bay leaf
350ml water (or vegetable stock)
A small handful of finely chopped parsley

For the dressing
3tbsp olive oil (I used the drained oil from the roasted vegetables)
1tbsp lemon juice
1 tsp Dijon mustard
1/2 clove of garlic crushed (I used a roasted clove of garlic I put in with the vegetables)
1/4 tbsp honey
pinch of salt and a few twists of black pepper

Preheat the oven to 200°C, then toss the chopped vegetables in a roasting tin with the caraway seeds and olive oil. Roast in the oven until soft and slightly caramelised; depending on the size and variety of your roots they may need different times, I tend to start with the beetroot, add the carrots 10 minutes later, the apples 10 minutes after that. It usually takes 30-40 mins in total.

Meanwhile place the lentils and bay leaf in a saucepan with the stock or water and bring to the boil. Partially covered with a lid, and simmer for 30 minutes, or until the lentils are just tender. Drain away any excess liquid and discard the bay leaf. Season the lentils with a little salt and pepper, before putting to one side.

To make the dressing, just add the dressing ingredients into a jar with a screw-top lid; cap and shake vigorously to emulsify. Pour some dressing into the lentils when they’re still warm, stirring in a small handful of finely chopped parsley as you do.

To serve, combine the dressed lentils with the roasted vegetables and apple. Divide between two plates, top with broken pieces of soft goats cheese. then drizzle with a little more of the dressing.

Feed the Birds Tuppence a Bag

The last few days have seen a return of the wet weather, but before that the autumnal cold showed itself and reminded me that the birds at the allotment, and garden, needed a bit of extra help with food. Our allotment, squeezed in between houses, shops and schools like an urban oases, has a pretty varied bird life. In recent months I’ve seen everything from blue-tits and sparrows, to goldfinches and spotted woodpeckers. We usually put out some food at this point, to supplement the natural sources and the drying seedheads of the sunflowers and other flowers.

Last year I made seed cakes which, hung from the apple tree, were very popular with the feathered visitors to the plot. As was the peanut wreath which we hung on the shed door. Our own homemade food sources were always supplemented by bought bird feeders filled with seeds and nuts. However, the winds of early autumn have destroyed or completely removed these feeders, sending them across the allotment and into mangled heaps or oblivion. Despite the fact that I can buy a new one from a supermarket for a few quid I decided to make my own replacement. I may not be able to buy seed for tuppence a bag, but its pretty cheap from discount stores, so a homemade feeder cost me very little really.

You will need

A juice bottle or similar
Stick or twig of suitable size
Drill with drill bit matching diameter of stick
Needle
Seeds
String or thin wire
Craft knife

Wash and dry the bottle, as its important to ensure that its as free of moisture to start with (too much moisture will promote seed growth which birds aren’t keen). Use the needle to pierce a few holes in the base; this allows any water to drain out too. About 1/3 of the way up from the base, drill 2 holes the diameter of your chosen stick, and then thread the stick across so it forms a perch on both sides. On either side of the bottle, use a craft knife to cut out an opening just above the perch. Tie the wire or string around the neck of the bottle to form a hanger, before using the opening by the perch to fill the feeder with seeds. The seeds should reach the level of the perch, so that initially the birds don’t need to reach too far into the feeder. Hang on a branch with easy access for yourself (to refill) and the birds (easy to land etc.).

The Power of the List

Sometimes everything becomes too much doesn’t it? Your mind races, you don’t know what to do when, it overwhelms you and you can’t achieve anything. It happens less these days, but there are still moments when I’m overcome by the things which I should do. However, I’ve learnt that a list can be a friend; writing things down can really help clear the clutter in your mind.

Just putting things to paper is often all that is needed to slow the swirl of thoughts and enable me to have clarity in my thoughts. A list also serves an other purpose. It enables you to celebrate small successes; to be mindful of the little things that you achieve. Ticking off a task, however small, is an uplifting act; putting a smile on your face as you know you’ve succeeded in something. When you’re feeling down, just being able to tell yourself you can achieve is a huge boost. Even if its the washing up!

As my understanding of the power of lists has developed I’ve realised there’s a knack to a good list. You need to separate out tasks into little bits. So instead of bake bread; have separate items for mix, prove, bake, deliver. Each small step completed fosters confidence in yourself and encourages completion of more tasks. Another trick I’ve developed is the addition of items on the list which I know, however bad I may be feeling, I will complete. So, have breakfast appears often on a daily list; and I’ve even been known to write down something which I’ve already done, in order to ensure a tick straight away. Ticks, as I mentioned before, breed confidence and help to get things done.

As a cook and a gardener, lists are also brilliant. We manage our food budget best when we make a shopping list; using what needs to be used up and buying new ingredients to supplement those in the fridge, cupboard and on the allotment. On the plot, with so much to do, the list of jobs on the blackboard in the shed is what keeps things going and helps to ensure that important, but boring jobs, get done when they are needed.

I can’t extol the virtues of the list without touching on the fact that a list has got a dark side; a way of making you feel worse. It’s all well and good ticking off items on a list when you have done them, but what if you don’t complete them? The feeling of having a list; then ending the day with the same list (nothing checked off), or worse still more things on the list, is not necessarily a positive one. It can make you feel down and a failure, but I’ve found the way to cope with this is to make sure the items which go on the list are very specific and achievable. The big, ‘life-changing’, to-dos go on a master list, and get checked off occasionally. The day to day tasks get a list each day; and yes, I do put the occasional task onto the list I have already completed. It’s all about gaining confidence and getting the ticks on the page!

November at Plot 4

The weather this October has been really warm. As a result the allotment still has flowers blooming and on my last visit the ivy was awash with bees buzzing away.

October has still offered produce to harvest. The last of the raspberries have now been devoured, or are left for the birds to feast on. Our apples this year haven’t been the best, so only a few of the later apple variety have been available to use in dishes like those in my favourite five apple recipes. The plus side of an apple crop which has fallen or rotted on the tree, is a bumper windfall for the birds, with thrushes, blackbirds and starlings all gorging themselves. We have managed to harvest the last of the pumpkins and squashes, using them in risottos, cakes and to accompany many dishes. The Jerusalem artichokes are starting to be dug too. I love the nutty taste they bring to dishes, such as this Jerusalem artichoke purée. The Swiss chard is also looking resplendent in the autumnal sunshine, and has been a great addition to the kitchen too.

This time of year is great for planting out onions and garlic for overwintering, and even broad beans, given the mild autumn we’ve had so far. I usually plant a crop of each of these at this time of year, then another sowing in the spring. This helps with the successional cropping next year, but also allows for different varieties to be grown easily, and utilises space which otherwise would be left bare.

November is the last chance to get a few jobs done, until the weather turns for the worse on a more regular basis. The leaves that have fallen all over the allotment need sweeping up in order to make leaf mould. Although leaf mould contains not many nutrients; it makes a great mulch which, with little further attention other than a little watering in dry periods in summer and the occasional turn, also makes a good addition to any compost. The birds will soon need a bit of help with food too, so I’ll be putting up some feeders and using the old sunflower heads to fill them with seeds. It will also be time to make another bird food wreath.

How to make Gluten-Free Pumpkin Cupcakes

GF Pumpkin cup cakesThe pumpkins and squashes we have in the UK almost always end up in delicious savoury dishes, like those mentioned in my Favourite Five recipes, but in the USA and Canada they also have a tradition of using pumpkin in sweets and cakes. Famously this is in the form of pumpkin pie, which interestingly actually originates on this side of the Atlantic, with pumpkin pie recipes being found first in English cookbooks’such as Hannah Woolley’s The Gentlewoman’s Companion (1675).  Given our transatlantic cousins’ love of the sweet use of the pumpkin, I thought it was about time I embraced it too. Cupcakes are always a big hit in our family; so, with pumpkins ripened on the allotment, and children (and adults) keen on an after-school snack, I made these Gluten-Free Pumpkin Cupcakes.

You will need (makes 24)
Cakes
300g self-raising gluten-free flour
200g light brown sugar
100g caster sugar
2tsp mixed spice
2tsp bicarbonate of soda
150g sultanas
A pinch of salt
4 beaten eggs
180g unsalted butter, melted
zest 1/2 an orange
1 tbsp orange juice
300g pumpkin purée. (I roasted the pumpkin in two halves, then puréed the flesh, and used the leftover purée for soup)

Icing
100g icing sugar
1 tbsp orange juice
splash of food colouring

Heat your oven to 160°C and prepare the muffin/cupcake tin with paper cupcake wrappers. Mix all the dry ingredients in a bowl and add puréed pumpkin.  Beat the eggs and combine with the melted butter, orange zest and juice. Stir the dry ingredients into the dry mix, ensuring that it is thoroughly mixed.  Pour the batter into the muffin tin, leaving a little space for the mixture to rise in the oven. Bake in the oven for 12-15 minutes until golden and brown, place on a rack, and allow to cool. To make the icing, combine the orange juice and icing sugar to get the desired consistency, then carefully add the colouring, before mixing. Spoon the icing into a piping bag and pipe the cobweb design.
